Purpose of the Food Hub
1. to make locally-produced food increasingly available and affordable to all people in our region, while providing a fair return to area farmers.
2. to develop the necessary infrastructure that would allow regional farmers to produce more local food for local and regional markets, including
(a) a licensed, commercial-sized food processing kitchen, to do value-added, incubator, commercial, and educational activities
(b) dry, cold & frozen storage facilities, for ingredients and final products, and
(c) a wholesale/retail distribution outlet for fresh, stored, and processed local food.
3. to reconnect with our food through a variety of activities including local food community meals, community workshops (gardening, cooking, preserving, storing, extending the season), community celebrations and cultural events, as well as other activities that bring people together in cooperative, sustainable ways.
4. to serve the people of Windham and Windsor Counties in Vermont, as well as Sullivan and Cheshire Counties in New Hampshire.
